Cover well the salmon with cornstarch.
Add EVOO in the pan, then (semi) grill the salmon; both sides until crispy. Lower the heat. Wait for 30secs until the heat lowered.
And then pour the teriyaki sauce over the salmon about 2 tbs. Pour 2 tbs mirin, mix well, turn both sides frequently. And then cover the pan for 1-2 mins.
After that, open the cover, pour 1 tsp cornstarch somewhere in the pan; pour another 1 tbs teriyaki sauce & mix with cornstarch together til create a gravy. Pour another 1 tbs mirin, mix well for another 30secs. Turn the heat off.
